Peas, kale, purple green beans and sugar peas salad

This is a super easy, fresh and healthy vegetable salad recipe, that can be on your table in no time!

This year we have planted many vegetables in our garden, including peas, kale, purple beans, peas and of course pretty edible flowers. From these wonderful ingredients we have now prepared a super delicious salad that will make every gardener and vegetable lovers proud.

The salad is served with a reduced dressing of lemon juice, olive oil, kale-condiment, lime honey, pepper and salt. The kale-condiment must be prepared in advance, it can be kept for several months and is also great for other dishes.

The best place to enjoy the salad is on the balcony or in the garden on a warm summer evening. What more do you need?

Ingredients

Salad ingredients: 

  • a big handful of shelled peas
  • a big handful of purple green beans
  • 4 big stalks of kale
  • a big handful of sugar peas

Dressing: 

  • zest and juice of 1 green lemon
  • 2 tbsp olive oil
  • 2 tbsp sunflower oil
  • 2tsp kale-condiment
  • 1 tsp lemon honey

Instructions

Salad ingredients: 

Blanch the sugar peas, the peas and beans one after another and put them in ice water.

Remove the hard stems from the kale and cut it into bite-sized pieces. Then mix all the ingredients nicely on a plate or serving dish and decorate it with some edible flowers. 

Dressing: 

Mix all the ingredients and pour it over the salad. You can sprinkle some extra kale-condiment over the salad, to make it even more tasty.
